Soup is one of those staples that can be had all year round and as the year draws to a close and the weather gets a little more chilled, you find yourself craving something warm and tasty. There is nothing more reassuring than a pot of soup simmering on the stovetop, permeating the air, exciting your palette with what’s to come. It’s the perfect time to pull out the designated soup pot and cook up a nice broth but instead of throwing in those familiar ingredients, why not try something new and exotic?Cream of Broccoli
This soup is fairly easy to make but it does require you to be present at the stove for the full 25 to 30 minutes it takes to cook. The main ingredients are broccoli (finely chopped or pureed) stock and milk or cream. You would think that was all it took to make the perfect creamy soup but to get that thick texture you must make “roux” and basically that is equal parts of flour and fat cooked together and is used to thicken sauces and soups.
