For Brian ‘Ribbie’ Chung, Don Creary and Kamal Bankay, it was nothing alien when they agreed to join forces to open Ribbiz Ultra Lounge inside the Acropolis Gaming and Entertainment Centre in Barbican.

The three businessmen who go by the monikers ‘The Original’, ‘The Food Guru’ and ‘The Experienced Curator’ respectively, have succeeded in making Ribbiz the ‘premium hang-out spot for the discerning Jamaican’. While most of the dishes are easy enough to eat on the go, it’s hard to beat the relaxed, sit down experience at Ribbiz. Once you enter through the doors of Ribbiz Ultra Lounge at its opening time, you could end up spending your entire day there – the environment, the elements of entertainment from the music, the programmes selected for showing on the plasma TVs, the welcoming environment and even the small library at one end of the lounge might leave you forgetting your to-do list for the day.

Ribbiz Ultra Lounge is opened Sunday to Thursday from 12 pm to 3 am and until 5am on weekends. Unlike most neighbourhood eats, the kitchen opens late and food is accessible during the after party hours. “Initially, the challenge was getting the staff complement and service to the optimum level,” shared Don Creary. Fortunately, the team was able to overcome the primary challenges and has optimized their space for drinking, dining, partying and lounging while offering an exclusive food menu with a wide selection in drink mixes. Most of the eats were hand-picked during menu development; ninety-five percent of which were created by Don.

A few items that stand out on the menu are the Curry Goat Burger, Char Sui Pigstail, Ciroc Guava Ribs along with the wide assortment of starters and sides which include, sweet potato fries, red herring fritters, curry potato balls and three cheese fried wontons. Since the idea of curried mutton between two burger buns was puzzling it had to be ordered – tender and appropriately spiced curry goat could not have tasted better and in such an unusual form.

Tapas like quesadillas, beef and pork tacos served with nachos and cheese are also a big seller. Each dish is a testament of the innovative and adventurous personalities of the owners.
